1. Sap Extraction:  The process of making crystal coconut sugar begins with harvesting the coconut sap. The process begins with tapping the coconut tree flower buds. An incision is made in the bud, and a receptacle is installed to collect the sap that flows out.

This sap is known as coconut nectar or coconut sap. Coconut sap is the liquid obtained from the chopped coconut trunk. This sap contains natural sugar which will be extracted to make coconut sugar.

2. Collection: The collected sap is then transferred to a larger container or vessel for further processing. It is important to collect the sap within a few hours to prevent fermentation.
3. Heating: After the coconut sap is collected, the sap is heated in a container made of traditional materials such as wood or bamboo or a large pot or kettle and heated over low heat. Heating is done until a certain sugar form is reached. This heating aims to remove water in the sap and increase the concentration of sugar.
4. Stirring: During the heating process, the sap is constantly stirred to prevent it from burning and to ensure even evaporation

 

5. Crystallization  : After reaching the right temperature, the sap will be left in the container for some time where evaporation will occur. During this process, the sugar in the sap will crystallize and form coconut sugar granules such as crystallized coconut sugar.

 

6. Cooling and Drying : Once the desired degree of crystallization is reached, the pot or kettle is removed from the heat, and the mixture is allowed to cool. The cooling process helps harden the sugar crystals.

 

7. Grinding and Packaging : Once cooled, the hardened sugar crystals are ground into a fine powder or left to granulate, depending on the desired texture. Coconut sugar that has crystallized is then packaged and ready to be consumed or further processed.

5. Rich in nutrients, low glycemic index : Crystallized coconut sugar should be rich in vitamins, minerals and antioxidants, including potassium, iron, zinc and calcium.
